XL2007: Need some basic pivot table help, please

I'm just beginning to learn pivot tables. I did three yesterday morning on one set of data and they worked out well. I tried one last night on a different data set and it didn't look like I needed it to.

With the pivots that worked, my data was in columns, but not defined as a table. In the pivot tables, I had two or three data items, and my values counted the occurances. Each data item had its own column and filter.

In the last pivot table, my data is in a defined table. The values this time is a sum. All the data items are showing up in one single column, and I can collapse or expand, but not filter.

Ideally, I would like the pivot table to have a separate column for each item I put in the rows box, and a filter on each column that will affect the sum subtotals and totals.

Does that make sense the way I explained it? Is it possible?

DOn't know why the first ones worked okay, but this one was different.
But now I'm on track.
