How to prevent the title row from be sorted

When I use the A-->Z or Z--A icon for sorting, sometimes the title row also get sorted. Despite the fact that I indicated that the data includes the title row. Normally when I first does the sort, the title stay put but after numerous sorting the titles get sorted. How to prevent or correct the problem?

Use the Sort under the Data menu, this will give you this option and more.

Thanks Dave,
I did use the Data>Sort menu to specify the data range and it works fine this way, but it is much easier to use A-->Z or Z-->A which may sometimes end up with the title row being sorted also. I am trying desperately to solve this problem. Need help.
