How can I search an entire workbook for a text string, rather than worksheet by worksheet?

Group all of the worksheets first. Just right-click
any one of the worksheet tabs and choose "Select
All Sheets" from the popup menu.

Activate the first tab, press shift then click on the last tab before you activate find.
