How do you stop Excel from allow long strings of text in one cell from overwriting the neighboring blank cell?

it's not actually overwriting but it looks like it on screen. to fix this you can use wrap text. go to format menu, cells, select alignment tab and check the wrap text box. or you can just resize the column width by putting the cursor at the top of column border (place the cursor where the column letter or number is so it turns into a black cross with arrow heads on the horizontal bar)to the right of the column you want to resize and double click. if you want to do this with multiple columns just select the ones you want resized first. the latter method is probably not a good idea if you have really long text strings because, well, you'll see what i mean if you do it. there's always undo!(ctrl+z).
