Arranging schedule in excel

Gurus,
if I have a cake shop that makes carrot cakes and pound cakes.
The schedule for making carrot cakes is from 1 to 1:30.
The schedule for making pound cakes is from 1:15 to 1:45.
Order quantity of carrot cake is 10. Order quantity of poundcake is 8.
I have 5 staff who make cakes at a rate of 1 per 10 minutes.

If the list of cakes is like 1000+ and quantity of each order is also very big, number of staff over 100 , I simply can't do simple calculation for a solution.
can someone give me some suggestions on how to arrange the staff using excel?
