Is there a way to calculate a average, but eliminating the two lowest values from the data list before calculating the average?

Yes! Type 1 in a cell. Hold down Ctrl while you drag the fill handle.
for a range A1:a10, you could use
=(SUM(A1:A10)-SUM(SMALL(A1:A10,{1,2})))/MAX(1,(COUNT(A1:A10)-2))

this will cause an error if less than two values exist your range.
