Bulk moving pivot table fields to "Values" in order

Hi everyone,

Is there a way to quickly add all the pivot table fields (dates in the above image) to the "Values" section of the pivot table, rather than dragging and dropping them all individually? Dragging and dropping individually takes a long time since I need to make sure all the dates are in order; re-arranging by date is also cumbersome within the "Values" section; furthermore, I'm running similar reports every day so this is very time consuming.

Additionally, is there any way to bulk change all of the values from "Count of" to "Sum of"? This is also time consuming to click individually into all of these and change them to "Sum of"...
