I know how to conditionally format for duplicates. Is there a way I can format only those text values that show up, say, 4x or more, instead of 2?

How about
=COUNTIF($A$2:$A$200,A2)>3

sorry, I'm having trouble with this. Why do I need two arguments? I only need to look at entries B1:B50.

In that case use
Select B1:B50 then in conditional formatting > New rule > Use a formula
=COUNTIF($B$1:$B$50,B1)>3
