Copy Date as a text

Anyone have an idea how to copy a date (e.g. 5/14/78) to be a text that says May 1978 and doesn't have a number component to it? Not just formatting it to read May 1978, but actually have text that says May 1978?

Is there a shortcut key for strikethrough?
Ctrl+S is used for Save. Ctrl+5 is used for Strikethrough. Why Ctrl+5? When you use hashmarks to count |||| is 4, strike through to mean 5.
