Count If Text Question

Can someone tell me how to Count the number of occurences of specific text within a cell that also contains other data,

i.e. I need to count how many times Australia appears with a specific range (that I can do) however, sometimes it is within a cell that contains the words : Sydney Australia and these are not currently being counted.

=COUNTIF(Range,"*Australia*")
