countif range?

Hi, im trying to count values in a column due within 30 days, so I was thinking along the lines of a countif today -30 or any number of days upto today..

=COUNTIF(OPEN!$M:$M, TODAY()-30) would equal the ones due IN 30 days but not WITHIN 30 days... any help?

was just thinking, is there a way to calculate the following values from this column:

submitted in last 30 days
submitted between 30-60 days ago
submitted between 60-90 days ago

?
