Counting time in hours and minutes

This is a two part question:

1. Where I work we sometimes have to monitor the network and we have a spreadsheet to track this time. We have the cells to display as hh:mm and I'm looking for the total time it took. While it is easy to just count, is there a way to have a function spit it out. Example:

Start / End / Total
2:23 / 15:31 / ??

2. I do have a SUM function to count the time for months but if it goes over 24 hours, then it resets. Like if we monitored for 24 hours and 23 minutes and I did a function it would just display this, 0:23. It is possible to count past a 24 hour clock?

assuming no sessions go beyond midnight, it's just:

=end - start

format for elapsed time calculations is [ ]:

[h]:mm to stop the hours rolling over to days
[mm] to stop minutes rolling to hours etc
