I know I read it in one of my books but I can not for the life of me find it again.

How would I go about using additional colors not listed in the standard fill palette?

You can't actually add extra colours in Excel - you have a palette of 56 colours. You can however replace any of the 56 default colours with a colour of your choosing. Just go to Tools > Options, Color, Modify.
