I have data that contains part numbers that are sometimes converted to dates. For example, Part Number 1-20 becomes January 20 and Part Number 1-38 becomes January 38. How do I keep Excel from changing these values to dates? I have even saved the data as CSV and when you open the file Excel has changed to dates. The CSV does not import properly in a third party app we get invalid Part Number in the cases described above.

Consider saving as Tab delimited (.txt), and opening the resultant file using Excel's File | Open... menu command. This approach will invoke the Text to Columns wizard which will allow you to format the column containing your part numbers as Text.
