=B1-A1
where A1 houses an earlier date than B1.

just FYI:
with dates in B1 & A1, and
=B1-A1
in C1, excel will automatically format C1 as a date ('cos it's being smart & is noticing that you're doing calculations on dates...). Although this can be fixed subsequently formatting the cell as a number, it can be avoided altogether if you use:
=(B1-A1)
instead.
