Displaying text in expanded form fields

I am creating a contact form for several employees to complete each week. Some fields will need to have lengthy text. I've experimented with several applications (Word, Excel, Adobe). In Excel I have "locked" the cells that I do NOT want the user to be able to change and "unlocked" the fields where I want them to type. Then the plan is to "protect" the worksheet before I send it out. This is all fine. The problem is the text that needs to be longer than the line. I have selected wrap text and merge. This does allow the user to type unlimited text but then it does not display it. Is there a way to make the line automatically expand and display whatever text is typed there?
