Dynamic charting when data table is horizontal instead of vertical

I've come across various tutorials on dynamic charts online; however, they all are in regards to data tables where the time series is vertical (i.e. in column A). Because EXCEL limits the number of Series we can have, and since I am working to chart hourly data that spans years, I've recorded my time data horizontally (i.e. in row 1). The end goal, is to have a sheet where users enter/select a start/stop date and a chart will change scope to fit the period. Below is a small piece of the data starting with "DATE:" in cell B1 - note the data spans through column PEY and the x-axis doesn't need to display any values. Any guidance here is very much appreciated, thanks!
