Editing a time field with a default value of now()

I have a cell formatted to Time (HH:MM:SS) format with a default value of now(). I want to be able to click on the cell and edit the actual time displayed.

What is currently happening, as expected, is that I can edit the text already typed in the cell (i.e. now()).

Just EDIT|COPY and EDIT|PASTE_SPECIAL|VALUES on the same cell, that will change it from =NOW() to the date and time value in conventional form -- and then you will be able to edit it.
