Excel Formula to count blanks / If formula creates blanks

Hello - Having some trouble using a formula to count only cells with data. Issue starts when I use a formula and define the output as "" my formula to count actually takes in account those cells see below for my example

Try using
Excel Formula:
=COUNTIF(C2:C100,">"&0)
You don't really need to check the entire column, do you.....??
