Excel Pivot Table with Text Values or Matrix?

Hello,

I need to create a matrix style table from my data set similar to this:

Category
	Sub Category
		Product Name	Product Detail	Product Detail	Product Detail
		Product Name	Product Detail	Product Detail	Product Detail
		Product Name	Product Detail	Product Detail	Product Detail

<tbody>
</tbody>

The product details fields are mostly text fields, so I ran into issues trying to do this with a pivot table. Does anyone know the best way to do this in Excel? Or is it even possible?

I think you might have to elaborate further on this to get a better response. But I don't see the issue with pivot tables and text?
