Format texts within a cell

As far as I know, it's possible to format the text within a cell to the user's liking. For example, if in cell A1 there is the following text:

'My name is Sam'

Then the user is free to set My to red, name to blue and bold, and Sam to underlined, etc.

I have a workbook. On the same sheet, there are 2 cells that are very similar. They are both merged and centered cells from some other cells, and are formatted identically (general).

However in one cell I'm able to format each piece of text individually (as described above) and in other cell I'm not able to (the formatting ribbon options are grayed out).

What could possibly be causing this?

I'm using Office 2007 by the way.

Does the unformattable cell have a formula in it?

Hmm...no, but now that you've mentioned, it does start with a dash (-). But I meant for the entire cell to be just texts.

Put an apostrophy as the first character, does that allow rich formatting of the text?
