Formula linked to date

Hi,
I have a sheet with column with dates starting 01-Jan-2007 and I have the number of employees against each date in column B. If sheet 2 has names of employees who quit with quit dates against them, can the number of employees in sheet 1 ammend itself on the said date to reflect 1 less employee... thanks
