If I format a cell to read 1/3/2011 as Monday, January 03, 2011, is there a way to grab that day of the week out of the cell and paste it into another cell? I need to sort my data by Monday, Tuesday, Wednesday, etc and cannot find an easy way to do it.

Although for sorting purposes, you may want to sort by the weekday number:
=WEEKDAY(A1)
=WEEKDAY(A1)
