Help with COUNTIFS formula (I think!)

Hello everyone, I'm new to this forum as I've got a bit stuck on a spreadsheet I'm working on.

I work for a small charity that specializes in sending volunteers abroad on community led projects. I've always kept a spreadsheet of all the applications I receive over the course of a season (1st of March to end of Feb) and each year I manually count my placements to produce statistics for my work. I've now decided to create a new spreadsheet which will collect my statistics manually.

I'm not an excel expert and have reached a point where I need some help from someone knowledgeable.

I've been using the COUNTIF and COUNTIFS function so far to gather my stats but now I'm stuck because I want Excel to gather stats like volunteer ages and destination at the same time. I also want to add another condition to a formula I've already created.

It's impossible to describe what it is I need unless someone sees my spreadsheet with my comment boxes in it.

Would it be possible to email it to someone to have a look at?
