Is there a straightforward way to compare two tables and write out the records that don't match to a third table?

Excel Facts

Show numbers in thousands?
Use a custom number format of #,##0,K. Each comma after the final 0 will divide the displayed number by another thousand
Not exactly know what you need to compare: text or quantity/value.

Try following:

1. Setup one UNION query to come out all the items, the SQL like "Select Item From Table1 Union Select Item From Table2 UNION Select Item from Table3", assume the query name is Query1.

2. Set up one SELECT query to LEFT JOIN Query 1 and three tables.

Have you tried creating a Find Unmatched query?

Access has a Wizard that will guide you through the process.
