How to increment a text based list to next value in a formula

So, I've looked for an answer to this, but I can't find it. How do I increment a list in excel based on the value of another cell, and output this new list result to a new cell? Like, say I have a list of A, B, C, D, F, and I want to up that list depending on the value of another cell with a list of Fresh, In-Between, and Ripe? So far if the first list cell is C, and the second list cell is Ripe, I'd want to make the new cell B, as an example. Is there a way to do that without a ton of If statements?
