Is this possible? The only thing I could think of around this is to maybe add a new column to the source data which is just not an option for me. Is it possible to do a simple formula like = Item * .54 to be included as a new calculated item but have my columns grouped by dates?

Which lookup functions find a value equal or greater than the lookup value?
MATCH uses -1 to find larger value (lookup table must be sorted ZA). XLOOKUP uses 1 to find values greater and does not need to be sorted.
