I would like to know Excel File pattern

I would like to know Excel File pattern ( XLS file format). When I open xls file with some text editor but I can't read it (some field). But the actual data is readable.

My problem is, I want to make excel file with some text editor. Please give me some suggestion. Thank you so much.
