Inputting daily stats, need output of weekly stats

I'm tracking 4 variables daily, and need to be able to output them in various graphs (nominal, percentage of total, etc) in a weekly format that, if at all possible, can be changed in a pivot table/chart. I feel like I've done something similar before, but cannot figure how to do it again.

Currently, I have the 4 variables in columns, along with the dates and totals. Ideally, I would be able to do something like a date validation to select the date range, as well as whether I want the output table and/or chart to be daily, weekly, or monthly. If possible, I would also be able to select different overarching categories, under which the 4 different variables would change.

I realize that I may have to do some of this manually depending on how I want it output, but if it's possible to automate it and/or set it up in advance, that would be great.
