Keyboard Shortcut to Insert Current Date showing incorrect date

I'm trying to insert the current date including the time via keyboard shortcut.
The shortcut that I use is the default 'Ctrl+;' or 'cmd+;'

For some reason when I use this feature it shows the default date of January 01 1900

The TODAY() function works as intended although I just want a static date via keyboard shortcut

I'm using Excel for Mac Version 2011
OS: OS X 10.7 Lion

Excel Facts

Create a chart in one keystroke
Select the data and press Alt+F1 to insert a default chart. You can change the default chart to any chart type
If you do not get direct help, an alternative might be to use data validation -list and for your list use a single cell that has =TODAY() in it. Certainly not as handy as the shortcut, but it does give a fixed date

I'm curious as to how this would work. Would essentially work in the same way?
I'm planning on using this keyboard shortcut in order to quickly type in the date and time when I input my timesheet data for work.

The result would be the same, however if you wish to get both the date and time, use =NOW() rather than today which gives the date only

Would I be able to edit the content within the cell if I use this method?
Let's I input '=NOW()'
And then the time is like 1 minute passed 9AM
Could I change that after?

If you enter =NOW() into a cell, the date/time will change each time the sheet is recalculated. It will not reflect the date/time it was entered. If you use data validation with a dropdown list where the list is a single cell contaning =NOW(), then the date/time will not change when the sheet is recalculated. You will not be able to edit it with the exception that you can again use the dropdown to select the current date/time, or you can paste something else into the cell.

Darn, I don't think this will work out as well as I thought it would :(
