Outlook Voting Buttons/Flags --> Outlook Script --> Edit Excel Document

Background: I'm part of a 3 person team that is sent requests to run different reports and whatnot throughout the day. We are also being asked to log our activity in Excel and include various information regarding the task. This log is on Sharepoint and so far I'm able to automatically check out the document, input the information, then check back in and close Excel using VBA and Outlook scripts.

Issue: It would be HUGE for me to be able to assign/claim tasks as they come in.

Ideas so far: It would be super easy if I could set up an Outlook script on everyone's computer that would automatically bring up voting buttons (with our names as options) to claim a task. The script I currently have would then run and also input the name of the person who claimed the task. Alternatively, if flagging a message for followup could also trigger this script, that would be awesome.

TLDR: Is there a way to run a script/code based on interactions with the Outlook UI?
