Does anyone know an easy way to extract data from a PDF invoice and insert it into selected columns in an excel spreadsheet?

Appreciate any help I can get.

Which Excel functions can ignore hidden rows?
The SUBTOTAL and AGGREGATE functions ignore hidden rows. AGGREGATE can also exclude error cells and more.
Unless you have a PDF converter or PDF Professional it's not a simple task.
Thta's why they are PDF files !
If you have Adobe PDF Pro, then try
Document / OCR recognition / Recognise using OCR
Then
File / Export Text (accessible)
Then
Copy and paste from the Text file.

1) You might be able to highlight the data and copy-paste it directly into a worksheet.

2) I've had a small amount of success with PDFText (http://pdf-analyzer.com/).

Either way, you'll probably end up having to jiggle the worksheet around to make sure everything lines up properly.
