PDF /Image files to Excel converter

Hi Excel Experts,

At my work, sometimes data is in the form of PDF or Image files. I want to try out a good PDF/Image converter. Although, there are myriad online web converters. However, my data is of very sensitive nature and I cannot take risk uploading my files without ensuring the information is protected.

Is there any suggestion in terms of known protected website or a good Desktop PDF/Image Converter to Excel.

Would appreciate your suggestion.
