Permit users to add information to a spreadsheet but not edit anything

Hello All,

I want to create a booking form which will be accessed across 6 sites but staff cannot edit what they input.

Perhaps the cells can be locked and only I can unlock it and maybe a form field to add this information?

Is this possible? And if so, what is the best way to proceed.
