Pivot Table - Field Subtotal Titles

I have created the pivot table that I want but I would like to know if it is possible to edit the fieldname Total information at the head of the column for each grouping. Also any tips on alternate record shading and managing printing of multiple page tables would be awesome.

I'm still looking for some tips on producing some hard copies of my tables in a specific format.
