When you create a pivot without selecting a style it uses a default style.
If its not a custom style you can't go into modify to see the settings, so to see the settings dupicate the default.
If you then go into the modify on the duplicate (which is now a custom style and at the top) you can see the settings.
You will see "Row subheading 1" is in bold. Initially I had 2 on bold as well and hit clear.
These are what are causing the bold. Typically it happens on any of the Row Labels that can be collapsed and expanded which should be all of them except to one furthest to the righ (which is the lowest level of granularity in the pivot)
Not sure why in your case Material is not in bold. I would need a copy of your spreadsheet or an XL2BB of your data to look into it.
