If I 'right-click' a cell and choose PivotTable Options. Then click the Data tab, the choice under "Retain item deleted from the data source" is Number of items to retain per field" - The choices are greyed out. What is causing this? We have Excel 2010.

Use Data, What-If Analysis, Goal Seek to find the correct input cell value to reach a desired result
Try going to: File - Options - Data. If the "Prefer the Excel Data Model when creating PivotTables, QueryTables and Data Connections" is checked, un-check it.
