Placing data as legend or x axis on stacked bar charts in 2007

Sorry if this is old info and too simple for this forum. I am trying to create a 3-D stacked bar chart in Excel 2007 that will display 6 categories of data for various locations in one bar over a period of a year. In other words, there would be one bar for each location that would show all categories if there is any data for them in the spreadsheet for each month. I have the data set up in an Excel worksheet with the locations as the column titles and the categories as the row titles. There are categories and sub-categories as row titles.

First I have not been able to find the chart type that will stack several categories of info in one bar in Excel 2007.

Next, I have not been able to set the location data as the legend when first setting up the chart. No matter whether I add the range for the locations or the categories first, the locations are set up as the x axis initially and I have to switch row/column to get the locations to the x axis and the categories in the legend.

When I do that the order of the categories reverses also and I don't want it to.

Finally, I need for the data to expand when a month is added, but I have not been able to get the function of expanding the chart by dragging the blue dots to bring in the new data to work.
