protection of cell

i know about protecting cells.

Have question. Company wants us to add things to a sheet everyday and email it to them.

I was wondering that when data is entered into cells, is there a way just to protect those cells, without going to format cell The reason I want this is because more then one person will be entering data, and dont want to overlay something that is already entered or if clicked on wrong cell.

Also will need to be able to unprotect a cell if mistake made in entering data, or can this situation be handled by unprotecting cell in format cell?
