Recent fill colours not being remembered

We have just got office 2010 and although recent fill colours are remembered for one session, as soon as you close excel and re-open it they are lost. The colour pallet in 2010 is much more muted than in 2003 and I have many colour coded spreadsheets with colours that can now only be replicated by going into the more colours options.

Is there a way to always have the 'bright' colours from 2003 always available?
OR
Make Excel retain recent colours between Excel sessions.

Can anyone help???
