Reformatting Table via Formulas?

I know this may be very vague...bear with me.

I have a data set that has a few columns on the far right hand side, lets call them "Fav Food 1", "Fav Food 2", and "Fav Food 3". I have been manually reformatting this data so that it goes straight down the page so I can then create concatenates and run vlookups off of it. So for example:

I can create a solution that I can manage, but I am building this report for a team member to manage and they don't have the more advanced excel skills for data manipulation. So if I can reformat it using formulas or pivot tables that they won't have to continually update, that would be my preference.

Any help would be great, thanks!

Excel Facts

Show numbers in thousands?
Use a custom number format of #,##0,K. Each comma after the final 0 will divide the displayed number by another thousand
