I have multiple lines of data that have been sorted by Inventory Number then date. I then subtotaled by Inventory number. I want to now sort the inventory number subtotaled groups by date without losing the integrityof the subtotaled groups. Possible?

Waterfall charts in Excel?
Office 365 customers have access to Waterfall charts since late 2016. They were added to Excel 2019.
I'm not sure I fully understand, but wouldn't you get that result by sorting by date then by inventory number before adding subtotals?

I have mutliple dates and costs associated with each Inventory number, the costs are subtotaled. The subtotaled Inventory Numbers are now listed Alpha. I would like to sort the subtotaled groups by the oldest date within each group.

It might be easier to understand if you posted a small but representative sample of your data using Colo's utility below.
