Waterfall charts in Excel?
Office 365 customers have access to Waterfall charts since late 2016. They were added to Excel 2019.
You have the wrong argument for weekday.
Try:
Excel Formula:
=SUM(IF(WEEKDAY(B2:B17,2)>5,C2:C17))

If you leave the second argument of WEEKDAY off, the default returns 7 for Saturday and 0 for Sunday.
Option 2 returns 6 for Saturday and 7 for Sunday.
See this link for details, explanations, and the different options: How to use the Excel WEEKDAY function | Exceljet
