I have a time value in cell A1 (6791:38:52). When I click on this cell, in the formula bar it shows this value as: 10/8/1900 11:38:52 PM.

Is there a way to show this value in HH:MM:SS? Everything I try keeps on converting it to the date time format.

Welcome to the board.

If you need it to maintain it's numerical(time) value, then no, it will remain in the Date/Time format.

If you don't need the numerical value, then you can preceed your entry with an apostrophe '

'6791:38:52

But it then becomes just a text string, no numerical time value.

Or format the cells as Text PRIOR to entering the time.

If it's only displayed in that format in the formula bar it's not going to affect anything else - it's still the same value.
