Understanding Count, Countif Etc...

I want an understanding of Count and Countif and all the counting functions. I see many many topics about this subject and it seems Crazy for people to continue asking individual questions about it.
Is there a FAQ or datasheet about these commands ?

I want to know about how to use them so I can answer my own questions.

My first example is to count the occurances of letters in a row and
make a chart with the data.

This would make a great example. Along with Counting numbers
or frequency of numbers. then Maybe finish the doccument up with
how to count Abstract entries.

Just a thought.

Are the letters part of a string or individually in cells?
