Updating A Field from Another Table

How can I have a field in a table, for example the “Last Update” field, update based on the newest date that is entered into the “Update” field in another table?

Multiple updates will be entered; I want only the newest one to show.

Generally, it is not a good idea to have fields with values that are dependent upon fields in the same table or other tables. It violates the rules of normalization and can undermine data intergrity.

Anything that can be derived from fields in tables should be calculated in queries. Just link your two tables together, and then use an Aggregate Query to return just the most recent value (using the "Max" function on the Date fields) for each combination.
