URGENT Question about Data fields in Pivot Table

Hello all Pivot Table experts..

I'm relatively new to pivot tables, and I have a frustrating and urgent question.

So I have customer data in a raw excel tab. It includes columns for: Customer Name, Product SKU, Quarter, # of units sold, ASP, and Total revenue.

Now what I want to do is to put Customer Name and SKU on the left into rows (done!), and put the quarters up top into columns (Done!). So far so good. Next, I want to put # of Units, ASP and Total Revenue into Data section.

Herein lies the problem.

When I INITIALLY drag them in, they all appear. Another column named "Data" appears, and allows me to check boxes for # of Units, ASP, and Total Revenue. However, when I uncheck one of the boxes (i.e. try to temporarily hide... say, ASP, for instance), that data field disappears FOREVER. So when I click on the Data Drop down again, it's not there....

this is frustrating, since I want to show this to people, but I don't want them to uncheck one of the data outputs and then never see it again. I want it to be dynamic.

any ideas?... I'm in Excel 2003.
