Using a fixed number of rows in a chart

I have tried searching for this but have not found anything. Does anyone know how to fix the rows that are used in a chart. For example: A chart reporting on 6 rows, Jan through to Jun. When a nother row of data is added for Jul I want the earlist (Jan) to drop out of the chart.
