Using Count Function

I am trying to figure out how to count all of the blank cells in a column. I have an admin who knows very little about excel and I dont want to have to explain to her how to change the ranges within the =COUNTBLANK(K1:K6921) formula because rows are constantly being added.

If I do CountBlank(K:K) it returns way too many because it is counting all of the empty cells after the data ends.

How can I have it only count the empty cells within the data range. Note* the data is consecutive. There will be no empty rows until after the data ends.
