I need a formula that look at the drop down item selected from the drop down menu in column E, and based on what it sees it populate the cell in column F with a specific text. In the example pic the possible selections from the drop down are JC1 to JC8, for anything in the range I would want the text in the adjacent cell in column F to read "Juniper Creek".

Excel Facts

Create a chart in one keystroke
Select the data and press Alt+F1 to insert a default chart. You can change the default chart to any chart type
You can create a lookup table and use a VLOOKUP formula to do that.
See here for details: MS Excel: How to use the VLOOKUP Function (WS)

If you want it to return nothing until cell E1 is populated, you can wrap it in an IF statement, i.e.
Excel Formula:
=IF(E1="","",VLOOKUP(...))
